Today I present you some aubergine Milanesas with ham and cheese, a divine vegetable recipe because of how simple and fast it is to prepare. It is one of those dishes that always makes diners’ eyes light up as soon as they see it.
In my freezer they are never lacking since in only 10 minutes I have lunch or dinner ready. Imagine getting married after a long day at work, opening the refrigerator, putting the fryer on, putting them in the oven and that’s it. Of course, never freeze them with ham and cheese.
Everything that is prepared breaded is always perfect and these aubergine milanesas will not be less. That crunchy texture on the outside and soft on the inside, which as soon as you put them in your mouth is a real pleasure since the flavor of melted cheese is mixed with that of tomato, well I’m going to leave it because it is making my mouth water .

200 gr of York ham
12 cheese sheets
200 ml of fried tomato
1 teaspoon oregano
Oil for frying
Aubergine schnitzel with ham and cheese: step by step
1.- The first thing is to remove the tail from the aubergines and cut them lengthwise. The slices have to be approximately 1 cm thick.
2.- After you beat the eggs with salt and pepper, you also put the breadcrumbs in a container, add the oregano and stir it.
3.- Now assemble the milanesas by passing them first through the flour, then through the egg and finally through the breadcrumbs.
4.- You fry them in plenty of hot oil and when they are golden brown on both sides, put them on a plate with absorbent paper to remove the excess oil.
5.- You line a baking tray with parchment paper and arrange the aubergines on it. Place the York ham on top of each one, spread 2 tablespoons of fried tomato and cover them with the slices of cheese.
6.- Finally, you put them in the oven and gratin until the cheese is melted.
My tips and tricks
You do not need to put them with salt to remove the bitterness, although if you prefer you can.
I have cut them lengthwise but they can also be sliced wide.
It is very important that the oil is hot enough so that they come out crisp.
You can change the sabanitas for grated or powdered cheese.
