Baked egg casserole with potatoes: step by step
The first thing is to preheat the oven to 190º C with heat down.
Chop the onion and the beans in a pan with oil until soft and transparent. Meanwhile, you peel the potatoes and cut them into thin slices, more or less like the ones in the photo.
Add them to the pan, salt and pepper and fry them for about 10 minutes until they soften. When they are done, you take them out of the pan and put them in a colander to remove the excess oil.
You place the potatoes in a pan for the oven and sprinkle them with the cream. Put the eggs on top making a little hole so that they do not spread and sprinkle the parsley on top.
Finally, you put the tray in the lower part of the oven and cook it for about 10 minutes until the white is set.
My tips and tricks
If you don’t want the french fries, you can cook them with the skin and then cut them into slices of the same thickness.
We put the tray in the bottom of the oven, so that the heat goes from the bottom up and the white curdles and the yolk remains liquid.
If you prefer, you can add zucchini, carrots, bacon, serrano ham, etc.
You take them out of the oven and you’re done. You have seen how easy they are to prepare !!!
