Ingredients
- 1 kg of pork loin
- 1 glass of olive oil
- 1 glass of white wine
- 1 teaspoon oregano
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 teaspoon dill
- 3 garlic cloves
- Salt
- Pepper
Step by Step:
The first thing to do is wash and dry the loin with a kitchen paper, place it in the baking dish where you are going to roast it and add salt and pepper.
Now you peel, crush the garlic in a mortar and add half the wine and oil and stir it well.
You also have a syringe with the mash and you inject it throughout the piece of meat. Water it with the rest of the wine and oil.
Then you cover all the meat with the mash and add the aromatic herbs. Smear all the meat so that it takes on flavor. Finally, you have to cover the tray with film and leave it to marinate overnight in the refrigerator. After a few hours you turn it over so that it is impregnated on the other side.
Final preparation
The next day take it out half an hour before so that it loses the cold from the fridge.
While it loses the cold, you preheat the oven to 180º C. You bake for 1 hour and a half, every 30 minutes you turn it over and also water it with the sauce.
In the last 30 minutes you raise the temperature to 200º C so that the loin is finished doing well and acquires that beautiful golden tone. If you feel like it, you can put some potatoes cut into slices or bakers on another tray and sprinkle them with the sauce from the loin itself.
My tips and tricks
- You have to remove the tenderloin a little before the refrigerator to remove the cold and it will cook equally.
- Cook it well inside without burning.
- When you go to serve it, you can bathe it in its own sauce.
