The beans with clams is a world-famous dish of Asturian gastronomy, and I am not surprised, because when you put some good white beans or some beans with some great clams, you get a dish with a taste of the sea that tastes like blessed glory.
If you love cooking with a spoon, as I do, this recipe for white beans with clams will make you fall in love, because it is very easy and it takes very little time to prepare in a quick or express pot . If you have time, you can also cook them in a traditional or clay pot , that of your choice.
The secret of this dish is in a good choice of the raw material, although you can also make them with beans or white beans from the pot and they will be fabulous. And if you don’t believe it, you can check it by doing them.
Beans with clams: step by step
Ingredients:
- 500 gr of beans
- 500 gr of clams
- 1 ripe tomato
- 1 onion
- 1 carrot
- 1 leek
- 1/2 green pepper
- 1 bay leaf
- 4 cloves of garlic
- Parsley
- 1/2 glass of white wine
- Extra virgin olive oil
- Salt
The first thing you have to do the night before before cooking is to put the beans in a container, cover them with plenty of water and let them soak for about 12 hours.
Place the fresh clams in a bowl with water and a good handful of salt. Let them soak for about 2 hours to release all the sand they may have.
After 12 hours, drain the beans. Pour clean water into the pot and add them.
Place all the vegetables, except the tomato, 2 cloves of garlic and the bay leaf in the pot or in a net of those to cook chickpeas. You put it in the casserole and season it.
Cover the pot and cook for 15 minutes from the moment the steam starts to come out. When they are cooked, if they have a lot of broth you can remove a little. Remove the vegetables and reserves.
Chop the other garlic and fry them a little, without turning brown, in a pan with hot oil.
Add the diced tomato. Sauté everything for a few more seconds.
Drain the clams and add them to the tomato. Cover the pan and have them on the fire until they open.
Take the clams out of the pan and put them on top of the beans. Sprinkle some parsley.
Finally, remove the bay leaf and mash all the vegetables including the tomato. Pour it all over the beans with clams.
