For this weekend I bring you Chicken rice. Quick and easy recipe that I have a lot of affection for him since my grandmother taught me. I am going to transmit it to you just as she did and I am going to give you a series of tips to get it right.
The good thing about this rice recipe is that it is easier to prepare than you imagine, you can do it for all the diners you want by simply adding or removing rice, it is very nutritious and very cheap since it is within reach of all pockets .
It is a classic among classics, a lifelong homemade meal. This dish is one of the basics in my kitchen and with which I am in love because with very little I make a movie dish that both adults and children like.
If you don’t know how to make rice with chicken, don’t worry because I’m going to explain it to you in great detail below, and I’m also including a very simple explanatory video to follow. So let’s go for the recipe!
1/2 chicken split
400 gr or 3 cups of round rice
1 red bell pepper
1 large tomato or 2 small ones
100 gr of peas
2 cloves of garlic
1/2 teaspoon food coloring
Extra virgin olive oil
Chicken rice. Quick and easy recipe: step by step
1.- The first thing is to put a paella pan or a wide and low casserole on the fire with a splash of oil. Once it is hot, add the onion and garlic, all finely chopped. We add a pinch of salt to make it sweat and poach better. We stir and let it fry for 2 minutes.
2.- Next, add the pepper cut into squares and the tomato, peeled and diced. Sauté for 4 minutes, stirring from time to time.
3.- After 4 minutes, add the broken chicken, add a little salt and brown it together with the vegetables for another 4 minutes.
4.- We put the rice and sauté it for 2 minutes so that it absorbs all the flavors.
5.- Finally, add the water or chicken broth, the peas and the food coloring. For each cup of rice we have to add 2 of water but, if you have weighed the rice, you have to add twice as much water and a little more, in this case it is 1 liter of water for the 400 grams of rice.
6.- Now stir and cook 3 minutes over high heat. Cover and cook for another 15 minutes over low heat. Finally, you turn off the heat and without uncovering, let it rest for 10 minutes so that the rice settles and remains just right.
My tips and tricks
I have made it with chopped chicken because it comes out juicier, but you can change it for chicken skin, thighs or wings, that is your choice.
You can also add more vegetables such as artichokes, carrots, beans, leek … Creativity to power.
The best thing to cook this type of rice is the paella pan, but you can also use a clay pot, a frying pan, a saucepan … as long as the container is wide and short.
You can also use arroz bomba as well.
Let it rest without uncovering the time that I indicate. I know, it is very difficult to have rice as good as this in front of you and not try it, but the wait is worth it.
If you don’t like food coloring, you can swap it for two tablespoons of tomato sauce .
