Today’s sweet recipe is a Cloud Cake of cream and lemon that, as its name suggests, is fluffy and juicy like those little clouds that we see in the blue sky, my poetic vein has come out. It has a mild citric flavor and a lot of aroma, perfect for a good table or for your breakfasts or snacks with a good coffee.
One day surfing the net I saw cloud cake, I could not contain the desire to try it and what a wonder, it is one of those sweets that you eat once and you have to repeat. What a surprise that I was, also when I saw the reaction that everyone had when eating it I convinced myself to do it over and over again.
This easy, quick and homemade cakerecipe is one of those that in just over half an hour you have finished it, as who says, you don’t even know it and the result is spectacular. I have done it several times and each day we like it more.
I have put lemon zest in it, but you can change it for a lemon, chocolate, orange yogurt … As if you want to do it only with liquid cream , the result is fantastic and its texture is so peculiar that as soon as you smell it, it won’t work. to be neither the crumbs.

Cloud cake with cream and lemon: videoreceta
250 gr or 3 glasses of wheat flour yogurt
250 gr or 3 glasses of sugar yogurt
60 ml or 1/2 glass of mild olive oil yogurt
200 ml of whipping cream
Zest of 1 lemon
1 sachet of yeast
A few drops of vanilla essence
1 pinch of salt
Butter or mold release spray
Step by step recipe
The first thing is to separate the egg whites from the yolks and put them in different containers.
Add half the sugar, the pinch of salt and the whites until stiff. If you see that they do not rise you can add a little icing sugar, it is hand of saint.
In another bowl you put the liquid cream, the rest of the sugar and mount it. As soon as you see that it is well done, stop because if you do not run the risk of going overboard and it can be cut or turned into butter.
In the container where you have the yolks, add the whipped cream, the oil and stir everything with enveloping movements, taking care not to lower it.
When the mixture is uniform, add the flour mixed with the yeast, sift it and stir it again carefully. Add the lemon zest, the vanilla essence droplets and stir again
Finally, you have to add the whipped whites little by little until you get a homogeneous mixture.
Preheat the oven to 180ºC with heat up and down.
While it is heating up, you are lining the bottom of the mold with greaseproof paper, cut the edges, grease the sides with butter or with the spray and pour the mixture.
Bake for about 40 minutes. When you see that it has risen, lower the temperature to 160ºC. After that time you should check that the cake has set by clicking with a toothpick, it has to come out clean. Once cold you can unmold it and decorate it as you like.
You will see what kisses and hugs they will give you when they see you with this cloud cake, they will eat it in the blink of an eye.
