Hello friend cook! This week I have to make easy and homemade gluten-free recipes , at the request of María del Carmen, a friend who follows me. She and her son are celiac and must follow a very strict diet but they don’t want to get bored with what they eat, no wonder, because the regimens are sometimes very tedious. So I will try to help you by making a menu with original dishes, tasty, easy and above all suitable for coeliacs .
Of course these recipes can not only be eaten by people with gluten intolerance, this is an ideal compilation for all audiences.

Eggplant cannelloni stuffed with feta cheese:

Ingredients:

  • 2 aubergines
  • 200 gr of feta cheese or goat cheese
  • 1 onion
  • 2 cloves of garlic
  • Extra virgin olive oil
  • Salt
  • Pepper

Step by Step:

  1. Preheat the oven to 180º C. While washing and cutting the aubergines into slices about a finger wide. Salt and pepper them generously.
  2. Now you place them on a baking tray, previously lined with parchment paper, and bake them for 10 minutes.
  3. After this time, you take them out, wash them with cold water and dry them with kitchen paper.
  4. You put them back on the baking tray and smeared them with oil on both sides. Roast for 20 minutes, turning occasionally until tender without overdoing it.
  5. Cut and sauté the onion in a pan with hot oil. When it is lightly browned, add the minced garlic and do it all together for about 2 minutes.
  6. When the aubergines are warm, fill them with the sauce and the feta cheese. Roll them up like a cannelloni.
  7. Present them in a bowl and garnish with basil or other fresh aromatic herbs.

  • 2 slices of salmon
  • 2 lemons
  • Extra virgin olive oil
  • Salt
  • Ground black pepper

Step by Step:

  1. Wash the salmon and dry it well with kitchen paper. If you want you can remove the skin, but I always leave it to him so that I can handle it better when I cook it.
  2. Next, you put to heat a griddle or a frying pan with oil. When it is very hot, put the fish so that it is grilled. Depending on the thickness of the slices, you can make them 2 or 3 minutes on each side. They have to be well spent on the outside and juicy on the inside.
  3. When you find them cooked on both sides, you add salt and pepper to taste and a good drizzle of lemon and put them back in the pan on that side for another minute. Repeat this step for the other side.
  4. At the end of this wonderful salmon you can accompany it with a good salad.
