Eggplant cannelloni stuffed with feta cheese:
Ingredients:
- 2 aubergines
- 200 gr of feta cheese or goat cheese
- 1 onion
- 2 cloves of garlic
- Extra virgin olive oil
- Salt
- Pepper
Step by Step:
- Preheat the oven to 180º C. While washing and cutting the aubergines into slices about a finger wide. Salt and pepper them generously.
- Now you place them on a baking tray, previously lined with parchment paper, and bake them for 10 minutes.
- After this time, you take them out, wash them with cold water and dry them with kitchen paper.
- You put them back on the baking tray and smeared them with oil on both sides. Roast for 20 minutes, turning occasionally until tender without overdoing it.
- Cut and sauté the onion in a pan with hot oil. When it is lightly browned, add the minced garlic and do it all together for about 2 minutes.
- When the aubergines are warm, fill them with the sauce and the feta cheese. Roll them up like a cannelloni.
- Present them in a bowl and garnish with basil or other fresh aromatic herbs.
Andalusian gazpacho:

Ingredients:
- 2 slices of salmon
- 2 lemons
- Extra virgin olive oil
- Salt
- Ground black pepper
Step by Step:
- Wash the salmon and dry it well with kitchen paper. If you want you can remove the skin, but I always leave it to him so that I can handle it better when I cook it.
- Next, you put to heat a griddle or a frying pan with oil. When it is very hot, put the fish so that it is grilled. Depending on the thickness of the slices, you can make them 2 or 3 minutes on each side. They have to be well spent on the outside and juicy on the inside.
- When you find them cooked on both sides, you add salt and pepper to taste and a good drizzle of lemon and put them back in the pan on that side for another minute. Repeat this step for the other side.
- At the end of this wonderful salmon you can accompany it with a good salad.
