Egg flan is one of those favorite desserts by all and that reminds us of our childhood, because let’s see what mother or grandmother did not make a homemade flan that came out divine and tasted like a Sunday afternoon?
In this recipe, I’m going to show you how to prepare a classic pressure cooker egg custard and how to do it with two types of molds. I’m also going to give you some simple tricks to make it perfect for you.
Sometimes we complicate life too much, we think about things a lot because every time we want to do them better, forgetting that sometimes the best pleasures are in the simplest things like this delicious and nutritious dessert.

Recipe variation (with condensed milk)
Ingredients for the egg custard
8 tablespoons of sugar
1/2 l whole milk
Egg flan in 5 minutes and for less than 2 euros: step by step
1.- The first thing is to put 3 tablespoons of sugar and another 3 of water in a saucepan. You turn on the fire and let it caramelize until it takes on a nice golden color but without going overboard because it can burn and you have to start over.
2.- As soon as it reaches the color that you like the most, you pour it into the mold you have chosen to make the flan and reserve it.
3.- Next in a bowl you place the eggs, the sugar and beat it until everything is well integrated. I have added 5 tablespoons of sugar but if you have a sweet tooth, you can add a little more, that is to your liking.
4.- Now you are adding the milk little by little and continue beating.
Final recipe preparation
5.- You pour the mixture into the mold and cover it. Do not use a removable one because you are going to do it in a water bath and water can enter it. If you do not have the type of mold that I have used, you can pour the mixture into a bowl smaller than the pot, put caramel in the bottom, cover it with aluminum foil and put a plate on top. If you want you can see it in the video that I show you in detail.
6.- You put about 2 cm of water in the bottom of a pressure cooker. You can also make it in a conventional casserole, adding the same amount of water and the cooking time is 1 hour.
7.- You place the mold inside the pot and as soon as the valve rises you cook it for 5 minutes. After this time you wait for it to lose all the steam to open it.
8.- You carefully remove the mold from the pot, uncover it and let it cool down to room temperature. When it is cold, you put it in the refrigerator for at least 5 hours, although it is better from one day to the next.
9.- Finally, remove the mold by passing a knife around the edges and stirring the flan a bit so that it comes off and that’s it.
My tips and tricks
You can put the candy in the bottom of the mold or covering the walls.
To vary the flavor you can add vanilla, chocolate, cheese …
To know if it is curdled, prick it with a toothpick, if it comes out clean it is ready and if not you will have to cook it a little more.
