Eggs on the plate in the microwave: step by step
1.- The first thing is to put a splash of oil in a clay pot or in a microwave-safe container. You just have to put a thread since the chorizo will sweat and release its own fat.
2.- Place the thinly sliced leek inside and the chorizo as well. We put it in the microwave and cook it for 1 minute at maximum power.
3.- While you are breaking the asparagus into pieces, discarding the final part that is the hardest.
4.- Take out the casserole and put the asparagus, half of the peas very drained, the fried tomato well spread and the rest of the peas. You heat it for 1 to 2 minutes depending on the power of each microwave.
5.- Meanwhile, you are separating the whites from the yolks and putting each thing in a different container. This step is very important if you want the yolks to be just right for dipping bread.
6.- Put a pinch of freshly ground pepper and topple the egg whites, ensuring that they occupy the entire surface. You heat them in 2 batches of 30 seconds until they start to set, but don’t do them completely.
7.- When you see that the whites are curdled around the edge and raw in the center, add the yolks and add a pinch of salt.
8.- Finally, you cook them for 30 seconds and if you see that they are not done, you continue heating them in batches of 10 seconds until they are as you like best.
