Falafels with yogurt sauce have spread all over the world and I am not surprised as they are very tasty, nutritious, inexpensive and very easy to prepare.
Depending on the place where they are made, they usually give them different shapes, some give them the appearance of croquettes, others of hamburgers (by the way, there is a kitchen utensil that makes them perfect) and also in the shape of a ball like the ones I have made.
And by the way, who doesn’t fit? I assumed that one of those people was you, but don’t worry, you’re not the only one, the truth is that it has happened to me too. But with this recipe, all the problems are over and you will see that they are not going to fall apart, nor are they going to be dry, nor pastures if not that you are going to leave them at their point.
This dish is usually accompanied by pita bread, tahini or yogurt sauce that I always prepare at home because I like it much more than the one sold on the street.
So follow me and I’ll explain step by step how to make the original recipe for falafels .

300 gr of raw chickpeas
1 medium onion
3 garlic cloves
2 tablespoons fresh parsley
1 tablespoon fresh coriander
1 teaspoon minced cumin
1 teaspoon yeast

Falafels with yogurt sauce: step by step
The first thing you have to do is soak the chickpeas for 24 hours in warm water. The next day, you drain them and put them on a kitchen towel or absorbent paper to remove any excess water. Now you put them in a mincer, a blender or a robot, whatever you have more at hand and grind them until you get a paste like sand (you can see it in the photo or in the video). Do not chop them too much, if you have any pieces left, nothing happens since that is how the authentic falafels dough is made.
When you finish the reserves in a bowl. Then you cut the onion, garlic, parsley and coriander (without stems) and put them in the blender glass together with the salt and ground pepper, the cumin and finally the yeast. You grind it and add it to the chickpea mass. With the help of a spatula, stir everything until you have a homogeneous dough, shape it into a ball, cover it with a cloth and put it in the refrigerator for at least one hour.
While you wait for the mixture to be ready, you can prepare the yogurt sauce to accompany them.
After that time, we take it out of the fridge and you will prepare the falafels. If you see that the dough is wet and they are not consistent, add breadcrumbs or flour little by little and stir until the dough is just right.
Next, you make some balls the size of a walnut and you reserve them on a tray until they are all there.
Put a frying pan with plenty of oil on the fire. When the oil is hot, you fry them on all sides until they are golden brown. As soon as they are fried, place them on a plate with absorbent paper.
Finally, you serve them with the yogurt sauce and a nice salad .
My tips and tricks for perfect falafels
When you make the balls, do not compress them too much to make them fluffier.
If you don’t want to make them all, you can freeze them for another time.
When they are done, let them rest for 5 minutes.
You don’t fry many at once to make it easier for you to turn them around
