Ingredients
- 800 gr of lean beef to cook
- 1 onion
- 1 green pepper
- 2 carrots
- 2 cloves of garlic
- 200 gr of crushed tomato
- 200 gr of peas
- 3 potatoes
- 1 glass of soft wine
- A few sprigs of parsley
- A few sprigs of rosemary
- 1 bay leaf
- 1 beef stock cube
- 1/4 teaspoon nutmeg (optional)
- Extra virgin olive oil
- Salt
- Pepper
Veal in the planter: step by step
1.- The first thing is to add a little salt to the lean meat and brown it with a splash of oil in the pot that you are going to cook it. Poaches until it is well sealed and has lost all the reddish color.
2.- As soon as it is sealed you put the very minced onion, the carrot cut into slices, the garlic in slices and the pepper cut in julienne and give it a few laps, add the tomato, the herbs minus the parsley and the wine and let it evaporate the alcohol.
3.- Then you undo the tablet in 450 ml of hot water and add this broth to the casserole. You close the pot and when the steam starts to come out, cook 20 minutes over medium-low heat until the meat is tender.
4.- After 20 minutes, turn off the heat and let it cool down.
5.- Uncover and add the peas and the chopped parsley. Mix and cook, without covering the pot, until the sauce reduces and the peas are tender. It does not have to be very soupy.
6.- Finally, remove from the heat, put the chips and eat.
My tips and tricks
- If you prefer to use the traditional pot, the meat has to be cooking for about 40 minutes or until it is soft.
- You can add other vegetables if you like them more.
- Veal is a meat with a high percentage of protein and iron.
- To make it juicy, you have to seal it very well so that it does not lose the juices.
