This cake base is better known as Breeze or broken dough and is perfect for making stuffed cakes like the famous lemon pie. The result is a crunchy and tasty base and as always, preparing it at home will be infinitely better than buying it on the street since its flavor and texture is unmatched by those of the supermarket.
To get it to be perfect, you just have to follow a few small and simple steps that I indicate below. And the best of all is that you can fill it with pastrycream, whipped cream,meringue and if you decorate it with fruit on top you will get a very cheap and delicious cake that will delight anyone.
250 gr of flour
125 g of very cold butter
1 teaspoon salt
1 tablespoon of very cold milk
A few drops of vanilla essence
How to make a base for tarts and tartlets: step by step
1.-You start by sifting the flour and placing it in a bowl together with the salt, the butter cut into small cubes and you knead it until you get the texture of breadcrumbs. When you have it, make a hole in the center and add the egg, the vanilla essence, the milk and mix again.
2.- Spread a little flour on the counter and work the dough until it forms a ball that comes off your hands. You wrap it in a transparent film and let it rest for 30 minutes in the refrigerator.
3.- After half an hour you take it out of the fridge, unwrap it and stretch it with the help of a roller until it reaches a thickness of about 3 millimeters. Do not make it thicker because what you want to achieve is a thin and crunchy base.
4.- As soon as you have the desired thickness, wrap it on the roller without pressing, do not worry if it breaks a little because you can put it back together.
5.- Now you place it on a greased and floured mold and unfold it. Take it carefully to the bottom pressing a little, you also have to shape it around the edges and cut the excess with a knife.
6.- Do not throw it away because you can wrap it and keep it in the fridge for about 3 days and in the freezer for up to a month.
6.- Prick the bottom with a fork so that air bubbles do not form that deform the base and cook well.
7.- Finally you introduce it in the oven preheated to 180º C with heat up and down and you bake it for 15 minutes.
My tips and tricks
If you want the sweet dough you just have to add 75 g of icing sugar .
You can mix the ingredients with a mixer or with a food processor. Even if you mix the ingredients with these machines you always have to pass the dough to the counter to form the ball.
Butter and milk have to be very, very cold.
