1.-The first thing is to sift the flour so that it is finer and no lumps are made when preparing the bechamel.
2.- Then you cut the butter into cubes and put it in a saucepan over the fire to melt it. You chop the onion very finely, I usually do it with a mincer, add it to the casserole and sauté it for 5 minutes. Add the diced ham and sauté it.
3.- Now you add the flour and sauté it well, pour the milk little by little without stopping stirring. Cook for about 15 minutes, stirring constantly.
