- 2 chicken breasts
- 4 tablespoons soy sauce
- 1/2 glass of white wine
- 1 cup cornstarch or potato starch
- 1 clove garlic
- 1 teaspoon ground ginger
- Oil for frying
- Salt
- Pepper
Japanese fried chicken: step by step
1.- The first thing is to cut the breast into pieces of the size of a bite.
2.- Next you prepare the marinade to marinate them. You peel, cut and crush the garlic clove in a mortar, pour in the wine and mix it. You pour the contents of the mortar into a bowl, add the soy sauce, the ginger and stir it.
3.- You submerge the chicken cubes in the marinade and stir them so that they are well impregnated. Cover with transparent film and let it rest for at least 30 minutes in the refrigerator.
4.- After that time you take it out of the fridge and drain it.
5.- Now you put the cornstarch in a container, add a pinch of salt and pepper and mix it. You coat the chicken by removing the excess cornstarch.
6.- Finally, heat the oil in a frying pan over medium-high heat or in a fryer at 170ºC and fry it in small batches so that the oil does not get cold. As soon as it is golden brown and crisp, you remove it to a plate covered with absorbent paper.

- I have used breast, but you can also use boneless hindquarters and with the skin to make it more crispy.
- If you have sake you can change it for white wine.
- Another way to flour the chicken is by pouring the cornstarch, salt, pepper and chicken into a self-sealing bag and shake.
