Ingredients to make the chicken
1 whole chicken (best free-range)
Extra virgin olive oil
1 glass of white wine
Lemon roast chicken: step by step
1.- The first thing is to wash the chicken well, especially the inside and dry it with kitchen paper.
2.- Next, place a whole lemon inside, make a few cuts in the skin, salt and pepper inside and out and put a little thyme, bay leaf and rosemary (the amount you prefer).
3.- Once this is done, tie the thighs by the bones with a kitchen string or kitchen silicone rubber, this will keep the shape, the filling and leave all the aromas in the meat.
4.- Now you pour a splash of oil on the oven tray and spread it with a kitchen brush.
5.- Put the oven at 180º, I prefer not to preheat so that the chicken gradually gains heat.
6.- Grill it for about 30 minutes, after half an hour, prick the skin of the breast with a toothpick and sprinkle the chicken with the wine. Put the diced potatoes on the tray and continue baking.
7.- After 15 minutes, you water well again with the liquid from the tray and continue the process.
8.- The normal thing is that it is well roasted in an hour, but depending on the size it may need up to an hour and a half. When you poke the meat with a toothpick and it does not offer resistance, it is ready to serve at the table.
9.- Finally, you serve it with a good salad and with a good dessert you will have a luxurious menu.
