The mascarpone cheese flan is a very pleasant and delicate dessert, its silky texture will be felt as soon as you taste it and it has such a mild flavor that it will be very difficult for you to forget it.
It is very easy to do and has no comparison with those you can buy prepared in supermarkets. You can cook it in individual molds and decorate them for great occasions or in a large mold to share it with your friends.
And since Christmas is just around the corner, in these last posts I am making recipes that you can prepare the day before and that you only have to plate and take to the table, because there is nothing more hateful than having a full house of guests and you being in the kitchen, instead of enjoying with all of them. And this mascarpone cheese flan in the microwave is one of them since in a few minutes you have it ready to put it in the refrigerator.
So if you want to entertain your guests with a soft flan with an intense and fabulous flavor of mascarpone cheese, I recommend that you include it in your Christmas menus.
- 4 eggs L
- 400 ml whole milk
- 250 gr of mascarpone cheese
- 200 grams of sugar
- 1 lemon
- 1 stick of cinnamon

Mascarpone cheese flan: step by step
1.- The first thing is to flavor the milk and for this you put it in a microwave-safe container with the cinnamon stick and the lemon peel. You put it in the microwave for a couple of minutes at maximum power, you take it out and let it infuse until it hardens.
2.- While it cools, you make the caramel. Pour into another container 50 grams of sugar, 2 tablespoons of water and mixes. You put it in the microwave at maximum power for 2 minutes. After this time you check if it is golden, if not, you can put it in batches of 30 seconds until it reaches the color you like the most, taking care that it does not smoke so that it does not become bitter. As soon as it is, you pour it into the mold and spread it over the entire base.
3.- Next you prepare the flan. Put the eggs and the rest of the sugar in a bowl and beat until everything is well mixed. You can use a wire mixer or an arm mixer.
4.- Now you add the strained milk and the cheese and beat again. Pour the mixture into the caramelised mold beforehand.
5.- You take the flan to the microwave and program it for 5 minutes at medium power. After 5 minutes you check how it goes and put it back another 5 minutes. You can also do it 10 minutes in a row, but this way you can control it better.
6.- You take it out of the microwave and check with a toothpick that it is set, if the toothpick has not come out clean, that means that it is not fully cooked and you can put it in batches of 2 minutes until it is well set.
7.- Let it cool down to room temperature. When it’s cold, you put it in the fridge for at least 6 hours, although I always leave it overnight.
8.- Finally, you unmold it and decorate it.
My tips and tricks for a perfect mascarpone cheese flan
- You can also make the caramel in a pan, here is my recipe for this type of caramel in case you are interested.
- If you want the flan to be lighter, you can replace the whole milk with semi-skimmed milk and add one more egg.
- Don’t wait too long to pour the caramel into the mold so it doesn’t crystallize.
