Today I bring you some delicious and easy Potato Bombs that can be used as an aperitif or a starter, although if I tell you the truth, when I’m tired of all the hustle and bustle of the day I prepare a few with a good salad and I already have dinner ready.
I like to cook these more and more Potato bombs because they are very versatile and practical since you can fill them with an infinite number of things such as cheese, chorizo, chicken, mushrooms … But you are in particular, they are the ones that leave anyone speechless of how good they are and if you do not do the test .
This recipe is one of the typical grandmothers, those that we all love and it is not surprising since potatoes are their main ingredient and I assure you that if you make them at home they will leave you crazy. You’ll see as soon as they look so golden and crisp, they won’t even leave the crumbs.

Ingredients
- 1 k potatoes
- 200 gr of mixed minced meat (half pork and half beef)
- 1 onion
- 100 ml of fried tomato
- 2 cloves of garlic
- 2 eggs
- Flour
- Bread crumbs
- Oil for frying
- Salt
- Pepper
Potato bombs recipe step by step
1.- The first thing is to cook the potatoes. Put a saucepan on the fire with plenty of water and a little salt, as soon as the water starts to boil, add them carefully and leave them until they are soft. You cut them in width because they get soft before and when it is time to make the puree, they are more easily crushed.
2.- While they cook, you prepare the meat. You chop the onion very finely and first put it in a pan with a splash of oil and fry it a little, then add the sliced garlic, add salt and fry until the onion is transparent.
3.- Now, you add the minced meat and sauté it until it loses its pink color and it crumbles. You add the homemade or brik tomato sauce , a pinch of salt, mix it well and let it cook for about 10 minutes over low heat so that the flavors mix well, stirring from time to time so that it does not burn.
4.- As soon as the potatoes are done, drain them and let them cool down. The meat also has to be tempered in order to work well.

5.- You crush the potatoes in a container, it better be flat to work more easily. You take a portion of puree and crush it with your hands until you get an omelette more or less 1 cm thick, put a tablespoon of filling in the center, place another potato omelette on top and close until you form a well-sealed ball with the filling in the center.
6.- The batters, passing them first through the flour, then through the beaten egg and finally through the breadcrumbs.
7.- Fry the bombs in a pan with plenty of hot oil and stir them regularly so they don’t burn. As soon as you see them with a golden color like that of the croquettes, remove them and put them on a plate with absorbent paper.
My tips and tricks
- Before serving, let them settle a bit so they don’t fall apart when you cut them.
- If you like them spicy, you can add a cayenne pepper to the meat while it cooks (removing it when done) or a few drops of tabasco.
- You can accompany them with mayonnaise sauce or aioli sauce .
