Hello friend @ cook @! I’m here again with the best recipe to prepare an authentic mojo picón . This is a traditional Canarian recipe that you can prepare with the mortar, the mixer or the thermomix and it is ideal to accompany meats and the typical Canarian wrinkled potatoes.
The idea was given to me by my husband, who spent many years working in Gran Canaria, and he told me the other day why he did not make a recipe for Canarian mojo picón . Every time we prepare a family barbecue it is already bundled with the mortar in hand and until it does not stop, although the truth is that the rest of us do not care because we love it.
Canaries call this sauce in different ways: mojo palmero, red mojo, red mojo or mojo picón . It is perfect for all types of meats: chicken, beef, pork …, it gives it a very special and exotic touch.
I’m going to explain this recipe to you, which is very easy to make and with which you are going to lick your fingers.

Ingredients:
- 1 head of garlic (about 8 or 9 garlic)
- 1 teaspoon ground cumin
- 1 teaspoon of sweet paprika
- 1 teaspoon salt
- 3 cayenne peppers
- 20 cc. vinegar
- 200 cc. extra virgin olive oil
Step by step recipe
- The first thing to do is give the garlic a few taps so that you can peel them better.
- Then, add the salt and cumin in the mortar and grind it well.
- Now also put the peeled garlic, I do it one by one, so that it is easier to crush them.
- Add the cayenne peppers and continue mashing vigorously to form a paste.
- Pour the mixture into the blender glass
- Add the oil, the paprika and beat a little.
- And finally, add the vinegar and continue beating until you get a smooth and homogeneous sauce.
You already have your mojo picón ready and if you make some wrinkled potatoes and some grilled steaks, you have prepared a delicious and healthy meal !!!
