In my house we don’t stop making cookies and since we discovered these Oatmeal Cookies with Chocolate Chips we have become staunch fans of this new discovery because oatmeal is one of our favorite cereals. And there is nothing like starting the day with energy and good humor.
Have you ever made homemade cookies ? What do you not dare because you think they are very cumbersome? It’s not like that at all, since making them at home is very simple, fast and the children love it, you just have to look for a little while and cheer up. You will see as soon as you put on you will repeat it over and over again because the flavor of these oatmeal cookies has nothing to do with the ones they sell on the street.

Ingredients:
- 130 gr of oat flakes
- 80 gr unsalted butter
- 65 gr of flour
- 65 gr of sugar
- 130 gr of dark chocolate chips
- 1 large egg
- 1/2 teaspoon baking powder
- 1/2 teaspoon of vanilla essence
- Salt

Oatmeal cookies and chocolate chips: step by step
The first thing is to melt the butter, I usually do it in the microwave because it is much easier. While the butter is melting you have to beat the egg, the sugar, the vanilla essence and a pinch of salt in a bowl. You stir until everything is well integrated.
Mix the melted butter with the rolled oats in another bowl. Now you have to mix the flour with the yeast and add it to the egg and sugar bowl.
You add the oatmeal and integrate everything well. Finally you add the chocolate chips and work it all until you get a slightly sticky homogeneous dough.
With the help of a couple of spoons, you take a little dough and you shape it into balls.
Now you have to smear the bottom of a glass with a little oil, so that it does not stick, and you will flatten the balls to give them a cookie shape. You also have to touch up the edges with your fingers to make them more beautiful.
With the oven preheated to 160º C, bake the cookies for about 20 minutes or until golden brown. Once out of the oven and when they are not burning, you let them cool on a rack to make them crispier.
My tips and tricks for some outrageous chocolate chip oatmeal cookies
- If you can’t manage with the spoons, you can grease your hands with oil and make balls with them.
- If you prefer, you can leave them in the form of balls instead of flattening them.
- As my oven has a fan, I have been able to put 2 trays at the same time since with the quantities that I put in this recipe, 19 cookies come out and you have to bake them in 2 batches because they cannot be very close together since with the yeast they rise.
- If your oven does not have a fan, set it to 180º C and with the fire up and down and you can only make one tray at a time.
- When they are totally cold you can store them in an airtight container.
