Ingredients
- 600 gr of pork loin fillets
- 1 onion
- 2 cloves of garlic
- 500 ml of cider
- 3 apples
- 2 tablespoons sugar
- 10 grams of butter
- 1/2 teaspoon thyme
- 3 basil leaves
- Extra virgin olive oil
- Salt
- Pepper
Pork tenderloin in cider sauce: step by step
1.- The first thing is to peel, core and dice one of the apples.
2.- Put a casserole on the fire with a splash of oil, fry the fillets seasoned on both sides to seal them. As soon as the reserves are ready on a plate.
3.- You add a little more oil in the same pot and fry the finely chopped onion. As soon as it takes color, add the sliced garlic and sauté everything a little. Add the steaks, thyme, apple cubes, basil leaves, and cider. Stir and cook for 5 minutes over low heat.
4.- After 5 minutes, remove the fillets so they do not dry out and let the sauce reduce for 3 more minutes.
5.- Meanwhile, peel and cut the other apples into slices.
6.- Put the butter in a pan to melt, add the sugar and a pinch of salt. Add the apple slices and simmer them, stirring them from time to time so that they caramelize well on both sides.
7.- Finally, you put the warm sauce in a blender glass and beat it. And now you only have to plate the tenderloin and accompany it with the sauce and apples.
My tips and tricks for a spectacular pork tenderloin in cider sauce
- You can change the tenderloin for pork or turkey sirloin.
- Don’t overdo the sirloin steaks so they don’t dry out.
- You can also put natural cider.
- Do not worry about the amount of cider since when you cook it it loses all the alcohol.
