Ingredients
- 4 free-range eggs
- 1 kg of chanterelles
- 3 garlic cloves
- 100 gr of acorn ham
- Extra Virgin Olive Oil
- Salt
Preparation
- Step 1 : Clean the chanterelles well without getting them too wet. You can use a brush or a cloth dampened with water.
- Step 2 : Cut them to verify that they are healthy and that they are all a similar size for homogeneous cooking.
- Step 3 : In a frying pan, pour a thread of olive oil and when it is very hot add the mushrooms. Sauté for a few minutes , adding salt to taste, until they take on a good color. If you like them well cooked, lower the heat a little to cook them a little longer. Make sure they are not dry.
- Step 4 : When the mushrooms are at their point, integrate the finely chopped garlic and mix well. You can also add minced parsley.
- Step 5 : In another pan with plenty of oil, fry the eggs. The yolk should be fluid.
- Step 6 : Just leave the Iberian ham at room temperature for about 10 minutes.
