We are in mushroom season and nothing is more nutritious and delicious than accompanying them with ingredients that complete a recipe loaded with proteins . The chanterelles are the most edible mushrooms thanks to the abundance and quality of their meat . They offer a mild flavor and a fruity aroma. Among its main properties is lignin , a woody fiber that helps clean the intestinal tract. Among the proteins in the mushroom, the amino acid, ergotein, stands out, which acts as a powerful antioxidant . It provides vitamin A and vitamins of group B, vitamins C and D are also present.

There are many types of mushrooms or fungi and on many there is still fear for their consumption. But as we already mentioned, chanterelles are the most edible. It is used in nobler meals due to its high nutritional value . Health is the most benefited by the substances and components it contains, as well as the effects on metabolism . Chanterelles are low in calories , improve the diversity of microbiota and work as anti-inflammatory.

Cook rich broken eggs with chanterelles and Iberian ham

Taking advantage of this season we are going to present a simple recipe that you can prepare without having to be an expert in the kitchen. The broken eggs with chanterelles and Iberian ham can be eaten at any time of the day. Offer your family or your guests a meal rich in minerals and vitamins , making the most of mushrooms.

Ingredients

  • 4 free-range eggs
  • 1 kg of chanterelles
  • 3 garlic cloves
  • 100 gr of acorn ham
  • Extra Virgin Olive Oil
  • Salt

Preparation

  • Step 1 : Clean the chanterelles well without getting them too wet. You can use a brush or a cloth dampened with water.
  • Step 2 : Cut them to verify that they are healthy and that they are all a similar size for homogeneous cooking.
  • Step 3 : In a frying pan, pour a thread of olive oil and when it is very hot add the mushrooms. Sauté for a few minutes , adding salt to taste, until they take on a good color. If you like them well cooked, lower the heat a little to cook them a little longer. Make sure they are not dry.
  • Step 4 : When the mushrooms are at their point, integrate the finely chopped garlic and mix well. You can also add minced parsley.
  • Step 5 : In another pan with plenty of oil, fry the eggs. The yolk should be fluid.
  • Step 6 : Just leave the Iberian ham at room temperature for about 10 minutes.
  • Step 7 : In a deep plate, serve the chanterelles with some thin slices of ham and in the center place the egg (add a pinch of salt). Around it, place other slices of ham.

The benefits of eating mushrooms are many. We can highlight their efficiency in reducing bad cholesterol , as they are rich in conjugated linolenic acid. It works as a meat substitute for both its proteins and its content of essential amino acids ; This helps to considerably reduce the intake of red meat per week.
