- 250 gr of spaghetti
- 150 grams of bacon or bacon
- 2 eggs
- 1 onion
- 200 ml of liquid cream for cooking
- 20 grams of butter
- Grated cheese (optional)
- Extra virgin olive oil
- Black pepper
Spaghetti with carbonara sauce: step by step
The first thing you should do is prepare the onion, because it takes the longest to cook to leave it quite poached. You chop it very finely and place it in a pan with a drizzle of oil, a little salt and butter and let it cook little by little over a low heat.
When you see a few minutes pass, put a saucepan with a liter of water and a little salt on the fire and as soon as it starts to boil add the spaghetti and let it cook for about 8 minutes or whatever the manufacturer puts on the package.
While they cook you have to cut the bacon into thin strips and put it in a frying pan without oil so that it is made with its own fat. Fry it until it is to your liking and reserve it on a plate with absorbent paper.
As soon as the onion is well poached, add the bacon, the liquid cream and the freshly ground pepper. Stir well and let it simmer until the pasta is done cooking.
When the spaghetti is done, drain it well. Meanwhile you take a bowl and add the 2 egg yolks and beat well, pour the pasta on top and stir well. The residual heat will curdle the egg.
And that’s it, you just need to serve them, pour them with the carbonara sauce and if you feel like you can put grated cheese on top.
My tips and tricks for some luxury spaghetti with carbonara sauce
- You can make them with fresh pasta, it is a bit more expensive but it takes half the time to cook.
- You can top with freshly grated Parmesan cheese.
- The eggs have to be at room temperature.
- To make the sauce smoother, you need to make the onion quite a bit.
