Spanish omelette stuffed peppers: step by step
You start by cutting the onion and potatoes. First you fry the onion a little in a pan with plenty of oil and then add the potatoes with a little salt. You stir, cover the pan and cook over medium-low heat.
While the potatoes are being made, you are preparing the peppers. You have to remove the tail (reserves) with a knife and carefully remove the seeds from inside.
As soon as the potatoes are done, you put them aside in a colander to remove the excess oil. Now beat the eggs in a bowl, add the potatoes, stir them and put them back in the pan with a drizzle of oil so that they set for a few seconds. You remove them to a bowl and mix again.
Next, you fill the peppers with the tortilla and shake them down so that they fall to the bottom and all the pepper is filled. Tapas with the tails.
Finally, fry the peppers over medium-low heat until golden brown and the tortilla is set. You turn them over from time to time so they don’t burn. You remove them and let them rest on a tray with absorbent paper.
