At home, no matter what the weather is, we do not give up good spoon dishes throughout the year, we love them and for this reason I am so fond of good stews like this that I am going to explain to you in this post.
This recipe for stewed potatoes is a typical dish from Ávila, although they are widespread throughout the Spanish geography, I have been eating them since I was a child and the truth is that I like them more every day.
So taking advantage of the fact that the other day my husband asked me when are you going to prepare those potatoes with ribs that you promised me the other day? The light bulb went on and I told myself this recipe cannot be missing on my cooking blog. Et voila, here you have it so you can enjoy it with a good bread.
So let’s get down to the recipe!
Ingredients to make the stewed potatoes with marinated ribs
4 or 5 large potatoes
1 k of marinated ribs
1 green pepper
2 cloves of garlic
1 bay leaf
Extra virgin olive oil
Stewed potatoes with marinated ribs: step by step
1.- You start by putting a quick pot with a little oil and frying the onion cut into small pieces and the garlic slices. Put a little salt so that the onion releases the water.
2.- Now chop the pepper and carrot very well, add it to the casseroleand fry it a little. Add the peeled and diced tomato and the paprika and stir it.
3.- Finally, add the split ribs and cover them with water. Covers and when the valve rises, cook them for 10 minutes over medium-low heat.
4.- While the ribs are being made, peel and snap the potatoes.
5.- After 10 minutes and as soon as the valve is lowered, you uncover the pot, add the potatoes and if necessary you can pour a glass of water. Cook them uncovered until they are soft.
6.- Finally, you let them rest for a quarter of an hour.
My tips and tricks for some stewed potatoes with scandal marinated ribs
If you feel like it, you can put a glass of white wine on them and let the alcohol evaporate for about 2 minutes.
If you make them in a conventional pot, you have to cook the ribs for half an hour until they are soft.
You can cook them both with dry ribs, as I have done them or fresh marinated, taking into account that if you choose the fresh ones you have to cook them for a longer time.
