For this weekend I bring you a yogurt and cinnamon Quesada, a very simple recipe to prepare and very inexpensive that is going to be great for your pocket that times are not to waste.
Within the gastronomy of our country there are many typical sweets from each region and most of them are made with very basic ingredients since they were the ones that were most readily available and one of those desserts is the quesada pasiega from the Pasiegos Valleys of Cantabria.
The original recipe is prepared with fresh cheese or milk rennet from the native cows of that region but in the absence of the milk that these beautiful animals give, I have prepared it with Greek yogurt that you can surely find anywhere and it gives you a very rich creamy touch.

Ingredients
- 1 plain Greek yogurt
- 2 eggs
- 160 gr of sugar
- 150 gr of flour
- 500 ml whole milk
- 60 gr of butter
- The zest of 1 lemon
- 1 tablespoon ground cinnamon

Yogurt and cinnamon quesada: step by step
1.- The first thing is to preheat the oven to 170º C with heat up and down.
2.- While the oven is heating, put the melted butter, the eggs, the yogurt in a bowl and beat with a mixer , better if it is with rods, until all the ingredients are well integrated.
3.- Now you add the sugar and milk and mix again. Then you sift the flour with a sieve or a strainer over the bowl and beat until you get a homogeneous mixture without lumps.
5.- Finally add the lemon zest and cinnamon and mix again.
6.- Next you line the base of a removable mold with baking paper, grease the sides with butter and pour the mixture inside.
7.- You introduce the mold into the oven at medium height and bake it for about 60 minutes until the quesada is set.
8.- To check that it is well done, you prick it with a toothpick and if it comes out clean that means that it is well cooked.
9.- Finally you let it rest at room temperature. I recommend that as soon as it is cold, you put it in the fridge and leave it for a few hours to settle and take on more flavor.
My tips and tricks for a yummy yogurt and cinnamon cheesecake
- You can remove 60 grams of sugar and add condensed milk that gives it a very special flavor.
- If you put it in the refrigerator, I advise you to take it out an hour before so that it tastes better.
- Keep an eye on the oven and if the cheese starts to open or big bubbles come out, you have to lower the temperature a bit.
- You can decorate it with cinnamon or icing sugar on top.
